"Flattened Rice" Healthy Breakfast

Flattened Rice called with differ names in India like Chidwa, Poha famously. Its healthy Breakfast full of Veggies and with less oil or Ghee and very Good for Daibetics ,its  controls Blood Suger.We can prepare this Breakfast in 10-12 mins. Ingredients.... Flattened Rice 1 cup 1 capsicum, roasted peanut, 1 carrot and other veggies you liked.(chopped into small pieces) curry leaves 8-10 Black Mustard(rai) seeds half tbsp. Salt as per taste, red chilly as per taste,turmeric less then half tbsp.oil half tbsp. 1 lemon 1.Heat the oil in pan and add Mustard seeds for a minute & add Curry leaves for a while. 2.Now add chopped veggies. 3.stir fry for 5-8mins on a low heat and add salt,chilly n turmeric now add half lemons juice. 4.on the other hand soak flattened rice into water for 2mins. 5.Now rins poha n add into veggies & add roasted peanuts.mix it well Off the flame.garnish with coriander leaves n serve hot.
